Chicken Wing Boil

Ingredients

Original recipe (1X) yields 8 servings
  • 6 large eggs
  • 1 pound smoked andouille sausage
  • 1/2 cup butter
  • 2 onions, thinly sliced
  • 3 cloves garlic, smashed
  • 2 teaspoons seafood seasoning, such as Old Bay®
  • 1 tablespoon Cajun seasoning, divided
  • 1 1/2 teaspoons paprika, divided
  • 1/2 teaspoon dried oregano
  • 2 teaspoons lemon pepper, divided
  • 1 (14 ounce) can reduced-sodium chicken broth
  • 1 3/4 cups water
  • 1 1/2 pounds red potatoes, halved or quartered
  • 2 ears corn, cut into 1- to 2-inch-thick slices
  • 3 pounds chicken wings, flat and drummette sections
  • 1 tablespoon olive oil
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons chopped fresh parsley
