Ingredients
For the Berry Fluff:
1 cup plain Greek yogurt
1 scoop vanilla protein powder
½ cup heavy whipping cream
1 cup mixed berries (strawberries, blueberries, raspberries, blackberries)
2 tablespoons powdered low-carb sweetener
1 teaspoon vanilla extract
1 teaspoon lemon juice
Optional toppings:
Fresh berries
Unsweetened coconut flakes
Chopped almonds
Dark chocolate shavings
Chia seeds
Instructions
Step 1: Prepare the Berries
Wash and dry berries thoroughly.
Slice larger strawberries into smaller pieces.
Set aside a few berries for garnish.
Step 2: Prepare Protein Base
In a large bowl combine:
Greek yogurt
Vanilla protein powder
Vanilla extract
Sweetener
Lemon juice
Mix until smooth.
Step 3: Whip the Cream
Using a mixer, whip heavy cream until soft peaks form.
Do not overmix.
Step 4: Fold Ingredients Together
Slowly fold whipped cream into the protein mixture.
Fold gently to maintain a fluffy texture.
Add berries and stir lightly.
Step 5: Assemble Dessert Cups
Divide mixture evenly into serving glasses or dessert cups.
