For the Halal BBQ Chicken Wings:
1 kg chicken wings, separated at the joint, wingtips removed
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika1/2 teaspoon black pepper
1/2 teaspoon salt
For the Homemade Halal BBQ Glaze:
1 cup halal ketchup
1/4 cup brown sugar
2 tablespoons apple cider vinegar
1 tablespoon soy sauce (halal certified)
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper (optional, for heat)
For the Crispy Fries:
500g frozen French fries
1 tablespoon olive oil (for baking/air frying)
Salt and black pepper to taste
For the Fresh Greek-Style Salad:
4 cups mixed salad greens
1/2 cucumber, diced
1/4 red onion, thinly sliced
1/2 cup cherry tomatoes, halved
1/4 cup pitted green olives, halved
1/4 cup pitted black olives, halved
50g feta cheese, crumbled
For the Salad Dressing:
3 tablespoons extra virgin olive oil
1 tablespoon lemon juice
1/2 teaspoon dried oregano
Pinch of salt
Pinch of black pepper
For the Spicy Chickpea Mash:
1 can (400g) chickpeas, rinsed and drained
1 tablespoon olive oil
1 small onion, finely diced
2 cloves garlic, minced
1/2 cup tomato passata (or crushed tomatoes)
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon chili powder (or red pepper flakes)
