Crispy Homemade Falafel + Creamy Classic Hummus

🌿 Falafel

Ingredients

1 cup dried chickpeas, soaked overnight

1 small onion, roughly chopped

3 garlic cloves

½ cup fresh parsley

½ cup fresh cilantro

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon baking soda

Oil for frying

Directions

Drain the soaked chickpeas thoroughly — do not cook them.

Add chickpeas, onion, garlic, herbs, and spices to a food processor.

Pulse until you get a coarse, crumbly mixture (not a smooth paste).

Stir in the baking soda right before frying.

Shape into small balls or patties.

Fry in medium-hot oil until golden, crispy, and cooked through.

Remove and drain on paper towels. Serve hot.
