Pizza Stuffed Baked Potatoes

Ingredients:

4 large baking potatoes
1 cup pizza sauce
1 ½ cups shredded mozzarella cheese
½ cup sliced pepperoni
½ cup sliced bell peppers (yellow or any color)
¼ cup sliced black olives
¼ cup sliced green olives
2 tbsp chopped fresh parsley (optional)
1 tbsp olive oil
Salt and black pepper to taste

Instructions:

Bake the potatoes
Preheat your oven to 200°C (400°F).
Wash and dry the potatoes, then rub them with olive oil, salt, and pepper.
Place them on a baking tray and bake for 50–60 minutes until soft.

Prepare the filling
Once baked, cut a slit on top of each potato and gently squeeze the sides to open it.

Scoop out some of the inside to create space for the filling (optional).
Stuff the potatoes
Add 2 tablespoons of pizza sauce inside each potato.

Bake again
Return the stuffed potatoes to the oven.
Bake for 10–12 minutes until the cheese melts and becomes slightly golden.
Garnish and serve
Sprinkle with chopped parsley.
Serve hot.

Tip:
You can add other pizza toppings like mushrooms, onions, cooked chicken, or sweetcorn.
