Pineapple Cowboy Candy 🍍🌶️
ingredients:

* 1 medium fresh pineapple, peeled, cored, and diced 🍍
* 1 1/2 cups granulated sugar 🍬
* 3/4 cup apple cider vinegar 🍎
* 1 1/2 teaspoons red pepper flakes 🌶️
* 1/2 teaspoon ground ginger 🌿
* Fresh mint leaves (optional, for garnish) 🌱

instructions:

1. Peel, core, and dice the pineapple into small chunks, then set aside 🍍
2. In a medium saucepan, combine sugar, apple cider vinegar, red pepper flakes, and ginger. Stir and bring to a gentle boil over medium heat 🍬🍎🌶️🌿
3. Add the pineapple chunks to the syrup, reduce heat to low, and simmer for 10 minutes, stirring occasionally 🍍🍲
4. Remove from heat and let cool for 30 minutes, then stir in mint leaves if using ❄️🌱
5. Transfer everything, including the syrup, into sterilized jars. Seal tightly and refrigerate for at least 24 hours 🫙
