Makhni Sauce
Ingredients:
2 cups ripe tomatoes, pureed
2 tbsp butter
1 tbsp oil
1 tsp ginger-garlic paste
10 cashews, soaked and ground
½ tsp red chilli powder
½ tsp garam masala
½ cup fresh cream
1 tsp sugar
Salt to taste
Instructions:
1. Heat butter and oil in a pan; add ginger-garlic paste.
2. Add tomato puree and cook until oil separates.
3. Add cashew paste, chilli powder, salt, and sugar.
4. Cook on low flame for 8–10 minutes.
5. Add cream and garam masala; mix well.
6. Simmer for 2 minutes and turn off heat.
Uses:
Butter chicken / chicken makhani
Pizza sauce base (Indian-style)
Paneer or tofu makhani
Dipping sauce for naan, kulcha, garlic bread
