🥣 Creamy Chicken Gnocchi Soup

Ingredients:
• 2 tbsp butter or olive oil
• 1 lb (about 2 cups) cooked chicken, shredded or diced
• 1 small onion, diced
• 2 cloves garlic, minced
• 1 cup chopped celery
• 1 cup shredded carrots
• 4 cups chicken broth
• 1 cup heavy cream (or half-and-half)
• 1 pkg (16 oz) potato gnocchi
• 1 tsp Italian seasoning
• ½ tsp thyme
• Salt & pepper to taste
• 2 cups fresh spinach (roughly chopped)
• Optional: ¼ cup grated Parmesan for extra creaminess
Instructions:
1. Sauté the veggies:
In a large pot, melt the butter over medium heat. Add onion, garlic, celery, and carrots. Cook until tender, about 5–7 minutes.
2. Add broth & seasonings:
Pour in the chicken broth, Italian seasoning, thyme, salt, and pepper. Bring to a gentle boil.
3. Add the chicken & gnocchi:
Stir in the cooked chicken and gnocchi. Simmer for 5–6 minutes, or until the gnocchi start to float and become tender.
4. Add cream & spinach:
Stir in the heavy cream and spinach. Simmer on low for 3–5 minutes, just until the spinach wilts and the soup thickens slightly.
5. Optional finishing touch:
Stir in Parmesan cheese for extra flavor and creaminess. Taste and adjust salt or pepper as needed.
