🍫 Cookies Made From Brownie Mix 🍪
📝 Ingredients
1 (18-18.4 oz / 510-520g) box brownie mix
2 large eggs
¼ cup neutral vegetable oil or melted butter
¼ cup all-purpose flour
½ cup semi-sweet chocolate chips
👩🍳 Instructions
Prepare: Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper or a silicone baking mat.
Combine Wet Ingredients: In a large mixing bowl, whisk the eggs and oil (or melted butter) together until fully combined.
Form the Dough: Add the entire box of brownie mix and the all-purpose flour to the bowl. Use a sturdy spatula or spoon to mix. The dough will become very thick. Fold in the additional chocolate chips at this stage, if using.
Scoop & Shape: For evenly sized cookies, portion the dough using a 2-tablespoon cookie scoop or a heaped tablespoon. Roll the dough into balls and place them at least 3 inches apart on the prepared baking sheet to allow for spreading. For a bakery-style look, gently press a few extra chocolate chips onto the top of each dough ball.
Bake: Place in the preheated oven and bake for 10 to 12 minutes. The cookies are done when the edges look set and the centers appear soft and slightly underbaked.
Cool: Let the cookies cool on the baking sheet for at least 15-20 minutes. They will be very soft initially but will firm up perfectly as they cool, developing the ideal fudgy texture.
