Cottage Cheese “Lasagna” (Low Carb)
Ingredients
1 lb (450g) ground beef (or ground turkey/chicken)
1 medium onion, finely chopped
2–3 cloves garlic, minced
1 jar (24 oz / 680g) marinara sauce (no-sugar-added preferred)
2 cups cottage cheese (full-fat or low-fat)
1 egg
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
1 tsp dried oregano
1 tsp dried basil
Salt & pepper, to taste
Olive oil, for cooking
Optional: 1 cup spinach (chopped), 1 cup sliced mushrooms
Step-by-Step Instructions
1. Preheat Oven
Preheat your oven to 375°F (190°C).
2. Cook the Meat Sauce
Heat a skillet with a splash of olive oil over medium heat.
Add chopped onion and sauté until translucent.
Add garlic and cook for 1 minute.
Add ground beef (or turkey/chicken) and cook until browned.
Season with salt, pepper, oregano, and basil.
Stir in marinara sauce and let simmer for 5–7 minutes.
If using spinach or mushrooms, add them now and cook until tender.
3. Prepare the Cottage Cheese Layer
In a bowl, combine cottage cheese + egg + half of the Parmesan cheese.
Mix well until creamy.
Season with a pinch of salt and pepper.
4. Assemble the “Lasagna”
In a baking dish, spread a thin layer of meat sauce on the bottom.
Add a layer of cottage cheese mixture.
Repeat layers 2–3 times (meat sauce → cottage cheese → meat sauce).
Finish with a final layer of meat sauce.
Sprinkle mozzarella and remaining Parmesan cheese on top.
5. Bake
Bake for 25–30 minutes, until bubbly and cheese is golden brown.
6. Rest & Serve
Let it rest for 5–10 minutes before slicing.
Serve with a side salad or roasted vegetables.
