Turkey Meatloaf Mini-Muffins
Protein-packed, perfectly portioned mini meatloaves that are juicy, flavorful, and great for meal prep or snacks.
Ingredients:
500g (1 lb) ground turkey
1 small onion, finely chopped
2 cloves garlic, minced
1/2 cup breadcrumbs (or almond flour for low-carb)
1/4 cup milk
1 large egg
2 tbsp ketchup (plus extra for topping)
1 tsp Worcestershire sauce
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika (optional)
Instructions:
Preheat the oven:
Preheat oven to 180°C (350°F). Grease a muffin tin or line with paper liners.
Mix the meatloaf:
In a large bowl, combine ground turkey, onion, garlic, breadcrumbs, milk, egg, ketchup, Worcestershire sauce, salt, pepper, and paprika. Mix until just combined.
Form mini-muffins:
Divide the mixture evenly into the muffin tin cups, pressing lightly to form mini meatloaves. Top each with a small dab of ketchup.
Bake:
Bake for 20–25 minutes, or until meat reaches an internal temperature of 74°C (165°F) and tops are lightly browned.
Serve:
Let cool slightly before removing from the tin. Serve as a main dish, snack, or pack for meal prep.
