Sausage Pancake Muffins

Ingredients:
1 cup (125 g) all-purpose flour
1 tbsp sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
3/4 cup (180 ml) buttermilk
1 large egg
2 tbsp (30 g) melted butter or oil
1/2 tsp vanilla extract (optional)
1/2 cup (120 ml) maple syrup, plus extra for serving
6–8 cooked breakfast sausages, chopped
Directions:
Preheat oven to 375°F (190°C).
Grease a muffin pan or line with paper cups.
In a large bowl, whisk flour, sugar, baking powder, baking soda, and salt.
In another bowl, mix buttermilk, egg, melted butter, and vanilla until smooth.
Pour wet ingredients into dry ingredients and stir until just combined.
Batter should be slightly lumpy.
Fold in chopped sausages evenly.
Spoon batter into muffin cups, filling 3/4 full.
Drizzle a little maple syrup on top if desired.
Bake 15–18 minutes, until golden and a toothpick comes out clean.
Cool slightly and serve warm with extra maple syrup.
