Ingredients:
4 boneless pork chops (about 1-inch thick)
1 cup grated Parmesan cheese
1 cup plain breadcrumbs
2 eggs
1 tsp garlic powder
1 tsp Italian seasoning
Salt and pepper, to taste
2 tbsp olive oil
Fresh parsley, chopped (for garnish)
Directions:
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
In a shallow bowl, beat the eggs. In another bowl, mix Parmesan, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
Dip each pork chop into the egg, then press into the Parmesan mixture to coat both sides well.
Heat olive oil in a skillet over medium heat. Sear pork chops for 2-3 minutes on each side until golden brown.
Transfer the seared chops to the prepared baking sheet and bake for 15-20 minutes, or until cooked through (internal temp should reach 145°F).
Remove from oven, let rest for a couple of minutes, and garnish with chopped parsley.
Serve with your favorite side dish and enjoy!
