Easy Halal Peach Ricotta Crostini with Smoked Turkey Breast

📜 Ingredients
1 baguette, sliced into 1/2-inch thick rounds

2 tablespoons olive oil, divided

1 cup fresh ricotta cheese

1 ripe peach, pitted and sliced into 1/4-inch wedges

1 tablespoon unsalted butter

1 tablespoon brown sugar (optional, for extra caramelization)

4 ounces thinly sliced halal smoked turkey breast (or halal beef bresaola)

2 tablespoons fresh basil, finely chopped

1 tablespoon honey or balsamic glaze (optional, for drizzling)

Pinch of sea salt

Freshly ground black pepper to taste

📝 Instructions
Preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet. Drizzle lightly with 1 tablespoon of olive oil and a pinch of salt. Bake for 8-10 minutes, or until golden brown and crispy. Set aside to cool slightly.
While the bread toasts, melt the butter in a skillet over medium heat. Add the peach slices and, if desired, sprinkle with brown sugar. Sauté for 3-5 minutes per side, until the peaches are slightly softened and caramelized with beautiful golden edges. Remove from heat.
In a small bowl, combine the ricotta cheese with a pinch of salt and black pepper. Stir gently.
To assemble the crostini, spread a generous spoonful of the seasoned ricotta cheese onto each toasted baguette slice.
Top each ricotta-smeared crostini with a piece of thinly sliced halal smoked turkey breast, artfully folded or draped.
Arrange a few caramelized peach slices over the smoked turkey.
Drizzle lightly with honey or balsamic glaze, if using.
Garnish each crostini with a sprinkle of fresh, chopped basil. Serve immediately and enjoy!
💡 Chef’s Tips
Peach Perfection: For perfectly caramelized peaches, ensure your pan isn’t overcrowded. Cook them in batches if necessary to get that beautiful golden crust.
