These are on the menu today. Think I’ll throw in some nettle, and chamomile so we can have them after dinner.
I made these for my older kids for years until they took over doing it. Wish they were here, I could use some kitchen helpers😂
Chocolate no bakes:
Ingredients:
– 1 cup granulated sugar (or 1/2 c honey, or maple syrup)
– 1/2 cup unsweetened cocoa powder
– 1/2 cup milk (or coconut milk)
– 1/2 cup unsalted butter (or coconut oil)
– 3 cups rolled oats
– 1/2 cup peanut butter
– 1 teaspoon vanilla extract
– A pinch of salt
Instructions:
1. Prepare a Baking Sheet: Line a baking sheet with parchment paper or wax paper.
2. Combine Ingredients: In a saucepan, combine the sugar, cocoa powder, milk, and butter. Cook over medium heat, stirring constantly until it comes to a boil.
3. Boil: Once boiling, let it boil for 1 minute without stirring.
4. Mix in Oats and Peanut Butter: Remove from heat and stir in the rolled oats, peanut butter, vanilla extract, and a pinch of salt until well combined.
5. Drop Cookies: Using a spoon, drop spoonfuls of the mixture onto the prepared baking sheet.
6. Cool: Allow the cookies to cool and set for about 30 minutes at room temperature.
