Who says canning has to be ordinary? These peaches are steeped in sweet tea and kissed with honey + stevia for a lighter twist on an old Southern favorite. Perfect on their own, spooned over ice cream, or stirred into cocktails year-round! 🌿☀️
🫙 Recipe: Sweet Tea–Poached Peaches
Ingredients (makes about 5 pint jars):
1 lemon
3½ lbs peaches (ripe but firm)
3½ cups water
4 black tea bags
½ tsp powdered stevia (or to taste, replacing the sugar)
1 cup honey
3 tablespoons lemon juice
Directions:
1️⃣ Prep peaches: Blanch peaches in boiling water for 30–60 seconds, plunge into ice water, peel, halve or slice, and pit. Toss with a little lemon juice to prevent browning.
2️⃣ Make sweet tea syrup: Bring 3½ cups water to a boil, remove from heat, steep tea bags 15 minutes, then discard bags. Stir in stevia, honey, and lemon juice until dissolved.
3️⃣ Pack jars: Place peach pieces into hot, sterilized pint jars (leave ½-inch headspace). Ladle syrup over peaches. Remove air bubbles, wipe rims, and secure lids.
4️⃣ Process: Water-bath can for 25 minutes (adjust for altitude: +5 min per 1,000–2,000 ft).
5️⃣ Cool & store: Let jars rest 5 minutes in canner, then remove. Cool 12–24 hrs, check seals, label, and store.
