New Mexico Style Stacked Red Enchiladas

Ingredients:
12 corn tortillas
1 lb ground beef (or shredded chicken)
2 cups red chile sauce (homemade or store-bought)
1 1/2 cups shredded cheddar or Monterey Jack cheese
1/2 small onion, finely chopped
1 clove garlic, minced
1 teaspoon ground cumin
1/2 teaspoon chili powder (optional)
Salt and black pepper, to taste
2 tablespoons vegetable oil (for tortillas)
